1¼ pounds of Italian-style turkey sausage (I prefer using either the hot or sweet varieties from Shady Brook Farms)
1⅓ pounds 93/7 lean ground turkey (I use Shady Brook Farms; one package equals 1⅓ pounds)
½ teaspoon ground black pepper
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
8 hamburger buns
DIRECTIONS
Begin by extracting the sausage meat from the casings, utilizing kitchen shears to snip through the casings, and then peel them away from the meat. Transfer the sausage meat to a large bowl alongside the ground turkey, pepper, Worcestershire sauce, and Dijon mustard. Mix thoroughly by hand until well incorporated; don't fret if the mixture appears moist. Shape the meat into 8 uniform patties, approximately ½-inch thick. Arrange them on a baking sheet lined with foil and refrigerate until cooking time.
Prepare the grill by cleaning it and preheating it to high heat. To prepare the grill, lightly dip a bundle of paper towels in vegetable oil. Using tongs, delicately rub them over the grates until they're glossy and evenly coated. Place the turkey burgers on the grill and cook covered for about five minutes, allowing distinct grill marks to form. Flip the burgers and continue cooking, covered, for an additional 3-5 minutes until they are fully cooked. Warm the buns on the grill, assemble the burgers and serve promptly.
Freezer-Friendly Instructions: These uncooked burgers can be frozen for up to three months. (Arrange the burgers on a baking sheet or plate for shaping, then transfer them to a sealable plastic bag for convenient storage.) Before serving, thaw the burgers overnight in the refrigerator, then cook as directed.
