Creamy Chicken Garlic Pasta

- 10 ounces dry pasta, (any kind)
- 1 pound boneless skinless chicken breast
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- salt & pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1 cup tomatoes, diced
- 2 cups spinach, chopped, optional
- 2 cups heavy cream, (or 16 oz)
- 1/2 cups Parmesan cheese, shredded or grated
- salt & pepper , to taste
Instructions
Prepare Pasta: Boil a pot of water and cook the pasta until it's al dente, following the package instructions.
Season both sides of the chicken breasts with garlic powder, Italian seasoning, paprika, and a good amount of salt and pepper.
In a large, sturdy pan over medium-high heat, warm olive oil. Cook the chicken breasts for about 5 minutes per side until they're fully cooked. Take them off the heat and place them aside.
Using the same pan, add butter and garlic, cooking for approximately 1 minute until fragrant. Introduce the tomatoes and spinach, cooking for 2-3 minutes until they soften and wilt.
Lower the heat and pour in the heavy cream and Parmesan cheese. Whisk until it's thoroughly combined and creamy. Season lightly with salt and pepper.
Once the pasta is drained, and the chicken is thinly sliced or cubed, return both to the pan. Stir everything together and serve!
